Healthy Banana Bread with White Beans

Healthy Banana Bread is not an oxymoron. 

It is possible! Especially when you have BEANS.

Back story: my best friend moved to Malaysia (insert me sobbing like a toddler) but she did leave me this fabulous cook book that focused on beans.

It’s called Spilling the Beans – cooking and baking with beans and grains every day.

And when I was flipping through the cookbook, deciding what to make, the banana bread really stood out.

When you compare to a “traditional” banana bread (let’s say at a very popular coffee shop), you’re looking at a whole of NON-nutrition. Per slice, it’ll set you back:

  • 380 calories
  • 17 grams of fat
  • 29 grams of sugar

And it’s only providing you with 2 g of fibre and 5 g of protein πŸ™

Remember that conversion from prediabetes to type 2 diabetes is not a guarantee. You can do so much to delay, prevent or completely reverse your prediabetes.

And it kinda seems like well hey, it’s not a doughnut. It’s banana bread! It must be healthy. Apparently not.

But this Healthy Banana Bread with White Beans can be a part of your prediabetes reversal plan with it’s source of fibre, protein and antioxidants from the blueberries (or dark chocolate – depending on what you add in.)

Ingredients
  1. 2 very ripe bananas
  2. 1 cup of canned white beans, drained and rinsed
  3. 1/3 cup sugar
  4. 2 eggs
  5. 1/4 cup canola oil
  6. 1 tsp of vanilla
  7. 3/4 cup whole wheat flour
  8. 3/4 cup white flour
  9. 1 tsp baking soda
  10. 1/4 tsp salt
  11. 1/2 cup of blueberries
Instructions
  1. 1. Preheat oven to 350 degrees F and brush sides of an 8x4 inch loaf pan with oil or spray with non-stick spray.
  2. 2. Add bananas, beans, sugar, oil, eggs and vanilla to a food processor or blender. Blend until smooth (chunks are ok!) Pour into a large bowl.
  3. 3. Add the flours, baking soda and salt and stir to combine.
  4. 4. Add the blueberries and stir to combine.
  5. 5. Spread this mixture into the prepared loaf pan. Bake for about 55 minutes. The top will be springy to the touch and an inserted toothpick will come out clean.
Notes
  1. I'll sometimes add chocolate chips to change it up too!

    I often put bananas that are overripe in my freezer for future use in a recipe just like this one!
