Lemony Orzo Pasta Salad with Mint
Now here’s a good one!
My friend Kevin referred me to the inspiration behind this dish – a Lemony Orzo Pasta Salad with Mint
When I saw the ingredients I knew I would love it.
It involves all the ingredients I love – and have been using lately – namely the orzo pasta from my Easy Baby Pasta “Risotto” dish, mint (fresh from my deck garden) and cucumber.
Cucumber is one of the last veggies my kiddos are eating these days so may as well make some recipes around them. I always have them in the house 🙂
And I added fresh peas to the original recipe just because I also love them and the kids (ok, one kid) will eat them.
Maybe you have fresh peas in your garden??

The first time I made this I went with the feta but you could also use boccochini – which is another recent obsession of mine – especially with the watermelon+basil+boccochini+balsamic vinegar salad (really – that’s all there is too it – see!)
Feta or boccochini, I will absolutely be making this Lemony Orzo Pasta Salad with Mint a lot this summer.
Hubby and I have been craving a good BBQ’d shrimp skewer lately and I think this would pair amazingly with some crustacean-action….
