Sweet Silly Salmon Skewers with Strawberry Salsa
Oh man I love salmon.
I don’t know when the love affair started, but it’s there.
I even go to the Keg and order it?! (I know. Sacrilege.)
I can’t help it! I feel like if someone is gonna cook salmon for me, I want it.
And it’s just so delicious and super duper healthy – tons of omega3 fats.
This recipe for Sweet and Silly Salmon with Strawberry Salsa is a go-to for this summer.
As I mentioned during the webinar, salmon fillets were MIA at the store I went to the day of the webinar (there were some in the fresh fish case, but she said she couldn’t sell them to me because they weren’t fresh. Good thing she knew her fish….)
So skewers it was.
The salmon cooks quickly – as per Hubby, cook it “low and slow”.
If you have leftovers it’s good for 2 days afterwards if kept in the fridge so you can add it to scrambled eggs for a brunch or make the Udon Noodle Bowl the next night and throw the leftover salmon on top of it.
The mint totally makes the “salsa” extra summery-fresh.
For the salsa, if you want a little kick, the jalapenos in the recipe are optional but add a nice contrast to the sweet strawberries so if your family likes a little heat, go for it!
